Today’s Workout: More lunch box fun

wp-1695259756575Yup, almost at a full hour! My thighs were trembling! Very awesome. All about the good kind of pain that comes from hard work.

Another prepped lunch in one of the lunch boxes my kid refuses to use. I made myself a salad to go with the steak and pasta but it was so much food, I didn’t need dinner. It was WAY too much. I’m already contemplating different types of meals to put in this thing; maybe rice, meat and veggies in the bottom and salad in the top. I think that would be fun. Those little rocks are actually Trader Joe’s Maple Fudge. They are VERY sweet, at least to me who’s cut out a lot of sugar from my diet. Yes, despite eating a toaster pastry. I only have juice or soda once or twice a YEAR and of course the odd dessert product here or there. It’s all water and unsweetened tea for me most days. I don’t find it boring. There are plenty of flavors of seltzer and again, Trader Joe’s comes through with their plain green tea and blueberry pomegranate green tea. They are delicious and super refreshing.

Today’s Workout: Yes, there’s two of them

I was all set on the desk peddler when the Saxenda kicked in and when that happens, you drop everything and go to the bathroom. Then I went back and did the full 40 minutes I’d intended to do in the first place.

For lunch I had steamed bok choy and snow peas with beef and ramen noodles. Around dinner, I wasn’t really that hungry so I had a small salad. I finally remembered to do my 50 squats and crunches and got my steps in. A couple days ago, I weighed myself and I’m down to 202.8! I’ve lost 29.2 pounds and I’m almost finally under 200. I have about a month before I go back to the doctor so I’m hoping to hit that goal before then and really impress them.

Today’s Workout: Time Change

They changed the hours so I come in an hour later than usual and I already don’t like it. I was going to do the desk peddler during a webinar but the new hours mean I missed the webinar. Yet another reason why they should have just left well enough alone.

For lunch I made that sandwich again but this time I didn’t go as heavy on the onion and added sliced avocado. I also mixed the meats; roast beef and turkey. It was interesting. I would probably make that again. Another drawback of the new hours is these two meals are too close together and I felt overfull. I need to try and eat either before I leave for work or on the way to work to avoid that. Also, I am almost out of those noodles and I have a healthier alternative as a replacement. Shaving a few calories off of a big meal like that couldn’t hurt.

Today’s Workout: Ugh, I can’t believe I’m saying this…

wp-1683561230483I’m back to the desk peddler for a bit because, and it is fucking surreal for me to say this, my hip hurts. I don’t know exactly when I got old, but here we are. I’ll get back to running once I don’t flinch when I try to stand up.

Lunch I had the beef and broccoli with noodles and dinner was a salad that I will freely admit I used waaaaaayyy too much pepper.

Anyway, it was a decent day despite being stressed out over an impending event that I can’t post about. I’m fine; it’s just funny that people think my job is quiet and easy. Clearly, they don’t realize how wild working with the public can be.

Today’s Workout: I Deserve Cute!

This is the point in c25k where I start to wonder if I can make it through the longer runs because I feel every second of those 5 minute intervals. I did them but wanted to have a fucking party once they were over.

I’ve mentioned how my kid won’t take cute lunches to school because they’re “embarrassing” and of course I am told this AFTER I purchase all the stuff to make them. So, I decided I deserve cute lunches and I’m gonna make them for my damn self! This is that soy marinated salmon with rice, garlic baked in sesame oil and red pepper flakes, avocado, tomato, and onion with rice. It was a LOT of rice. I’d put in half the portion next time but the two layers were the right way to go so the cold stuff stayed cold while the warm stuff went in the microwave.

Since I had some of that lemon tuna left, I threw in some lettuce and onion to finish it off. After all that rice, it was really refreshing and also light for after my workout. I don’t know how long I can reasonably keep the lemon tuna in the fridge but I wouldn’t mind making a couple extra portions for a quick, light meal. It sucks standing and chopping for a long time after a workout. I’m already sore and that doesn’t help. But if I have this prepped, all I need is a few extra veggies and bam! All done. I’m all about time management with these things since I  have all these other projects going on.

Today’s Workout: Nailed it!

Today I did my run while dinner was in the oven and it worked out sorta well? The salmon got a little overdone but the marinade saved it from getting dried out and the rice cooker kept the rice nice and hot. But this seems to be the most efficient way to use my time: set up the food, go run, check on it before I shower, food is done once my shower is also done. I end up eating later than I’d like (a bit too close to 8pm for my liking) but it’s better for my stomach not to eat right before or immediately after my workouts.

I’m working on using up this bag of broccoli and I think I like the fajita strip type cut for the electric lunch box. They cook fast and are easy to eat.

I didn’t eat the salmon for dinner; I packed it up for lunch tomorrow. I was determined to give making that lemon tuna another try and I fucking NAILED it! It was sooooo good. I used this recipe and tweaked it by adding some lime juice and slices of cherry tomatoes. I put some avocado on it, used homemade bread from the breadmaker, and used the foil to keep it from making a huge mess. It could have used a little more onion for my tastes and some lettuce (I was just done with cutting vegetables by the time it came to lettuce for the sandwich) but I’ll remember that for next time. I bet if I make bagels again, I can put the tuna on it and get the exact experience from the bagel shop. Or just eat it with a spoon on its own; which I was sorely tempted to do.

Today’s Workout: Last Day

Yeah, today was not the best day in terms of motivation but, I did get a lot done. Is it strange to be productive but not really feel like you were? Either way, I was able to get this workout in and make sure my meals were prepped.

I managed to turn in some reward points to get a head of lettuce for free for my salad today. I probably should have added some tuna but the container was REALLY full. I couldn’t even close it properly. As for dinner, I’m still working my way through all these snow peas. I’m impressed as to how long they last in the fridge

My steps weren’t as high as they should have been but at least I got the bike in. I also noticed that despite the scale not moving, one of my slightly oversized dresses that I could get away with wearing even though it’s too big is now too big to get away with wearing at all. I’m actually bummed about it since it’s a really cool dress but, I’d rather take the time to learn how to alter my own clothes than stay fat to keep them.

Today’s Workout: Cute

Since I was feeling a little sore, I went for the desk peddler today. I will run at least once this week but I’m feeling kinda bleh. I just needed to move around and get my heart rate up for a bit.

Since my kid thinks it’s embarrassing to take a cute lunch to school I decided to make one for my damn self! the food won’t go to waste and I can use all the cute lunch boxes I have. It’s a win win in my book.IMG_20230403_175857017

After all that food for lunch, I decided to go light with a salad for dinner. I used a lot of seasoning on the wings a LOT and lunch felt like too much food (probably could have done without the crackers and cheese). Even a Caesar salad seemed like too much. I just used olive oil and red wing vinegar.

A previous lunch was the leftovers from that salmon bowl I made and yeah, this was something that would have benefitted from separate containers. I ended up putting the cold ingredients on the cap while I warmed the rest in the microwave. That salmon was so good, I absolutely will make that again and put it in a more convenient container for reheating. One day if I ever get out of debt, I wanna get this Itaki so I don’t need the microwave anymore. I can just take the cold food out, set the timer for the hot food, and eat when ready.

I’m actually having fun coming up with different meals and experimenting with what I bring to work. I will need to cool it with the noodles and rice so I’m not eating so many carbs but, still! I have a ton of recipes I’ve saved in my ChefTap that I could make as well. That would be an interesting project.

Today’s Workout: New Recipe

Since I had some salmon I wanted to eat, I was searching around for a recipe to also use some avocado along with it and found this recipe. Of course I find it at work while the salmon is defrosting at home so, the plan became to let the fish marinate while I was doing the above run. By the time I’d finished, cooled down, and taken a shower, the fish would be ready cook!

The soup was my lunch. And the smaller bowl is mine, the bigger one was for the kid.

Of course I had to put my own spin on it by adding chopped garlic to the top of the fish, some sliced onion, and Trader Joe’s Furikake seasoning. All non-sponsored links, of course. This meal was bowl-lickin good. I’ll have to prepare better in advance in the future but WOW. The salmon was perfect, the crunch of the cucumbers and onion was a perfect balance to the soft avocado (which is a sensory nightmare for me). I put some lime juice on the veggies and to keep the avocado from turning brown. I wasn’t getting sick of the usual steamed meat and veggies but I did want more variety in my meals, still be healthy, and not make too much work for myself. Things that require a lot of work to cook mean I’m doing that instead of running on the treadmill. If I prep properly ahead of time, I’ll be able to add more healthy meals to my rotation.

Today’s Workouts: The Slump

The day was shaping up to be all productive and shit. I’d packed my salad for lunch:

Knowing that I’d need to go to the store on my lunch break to pick up a few things, I did my desk peddler… Then at the end if the day, I was just done. I didn’t want to cook anything but of course I had to eat dinner. I spent the entire ride home wondering how easy I could make dinner and settled on pasta.

I know it’s basically a carb overdose but I kept the portion reasonable and added the cheese for fun. Something about this whole week has just not been great in terms of being motivated. I hope next week is better since I’m getting on the treadmill again.
